Udk 619:579.62 Different Sensitivity of Various Serotypes of Listeria Monocytogenes to Lactic Acid Bacteria Bacteriocins

چکیده

In this study the sensitivity of various serotypes of Listeria monocytogenes towards five lactic bacteria bacteriocins was investigated, at two incubation temperatures (37C for 24 h and 4C for 12 days); six serotypes were indentified in 50 clinical/human isolates of L. monocytogenes and eight among 48 isolates from foodstuffs. This microorganism was found in many foodstuffs in numerous studies during the last decade. Among the methods for typing Listeria, the greatest attention has been dedicated to serological typing, which defines the basic characteristics of Listeria antigens. Namely, it is well known that bactericideal or bacteriostatic effects of bacteriocins are not only expressed towardse closely related bacterial species, but also towards less closely related Gram positive bacteria, such as L. monocytogenes. Bacteriocins can be eventually added to food, with the aim of decreasing the risk of listeriosis to the minimum. It was discovered that the bacteriocins, originating from Lactococcus UW and Lactobacillus sake 148 did not express inhibitory effects on any Listeria serotypes, while those bacteriocins originating from Lactobacillus sake 265, Pediococcus 347 and Lactobacillus sake 706 had a listericidal effect towards almost every assessed serotype. The highest bactericid effect was expressed by bacteriocin towards serotypes 4c and 4, at 37C after 24h incubation and towards serotypes 1/2b and 4b after 12 days incubation at 4C. Thus, the incubation temperature and time influenced the inhibitory effects of bacteriocins.

A Microplate Growth Inhibition Assay for Screening Bacteriocins against Listeria monocytogenes to Differentiate Their Mode-of-Action

Lactic acid bacteria (LAB) have historically been used in food fermentations to preserve foods and are generally-recognized-as-safe (GRAS) by the FDA for use as food ingredients. In addition to lactic acid; some strains also produce bacteriocins that have been proposed for use as food preservatives. In this study we examined the inhibition of Listeria monocytogenes 39-2 by neutralized and non-n...

Isolation and characterization of bacteriocins produced by lactic acid bacteria

This study presents the characterization of eight bacteriocins produced by lactic acid bacteria (LAB) previously isolated from a traditional cheese, Pico cheese. All isolates were active against Listeria monocytogenes and only three against Clostridium perfringens. Bioactivity was studied after treatment with different enzymes, organic solvents, surfactants, temperature, pH and NaCl. The antimi...

In Vitro Evaluation of Bacteriocin-Like Inhibitory Substances Produced by Lactic Acid Bacteria Isolated During Traditional Sicilian Cheese Making

Bacteriocins are antimicrobial proteins produced by bacteria that inhibit the growth of other bacteria with a bactericidal or bacteriostatic mode of action. Many lactic acid bacteria (LAB) produce a high diversity of different bacteriocins. Bacteriocinogenic LAB are generally recognised as safe (GRAS) and useful to control the frequent development of pathogens and spoilage microorganisms. For t...

Detection of bacteriocin-producing lactic acid bacteria from milk in various farms in north-east Algeria by a new procedure

Twelve samples of bacteriocin-producing lactic acid bacteria were isolated from raw milk. The screening procedure has the advantage of differentiating directly on agar plates active colonies among thenatural microbial population without subsequent culture. Five of milk isolates had effective inhibitory activity against Staphylococcus, Bacillus and all Listeria monocytogenes strains tested. In a...

L. monocytogenes is a food borne pathogen capable of causing serious invasive diseases in humans and animals, including abortion, septicemia, meningitis and meningoencephalitis. Isolation of the agent is the most accurate diagnostic method in all situations of suspected L. monocytogenes infection. Direct isolation of L. monocytogenes is relatively simple in cases when the number of organisms is...
